Ōmura Matcha begins in Sonogi, Nagasaki, where ridge meets bay and contrast shapes the leaf. Matcha No.75 is our signature house standard, carefully selected and blended from higher and lower-altitude tencha. Cooler elevations bring structure and refinement. Milder coastal climates bring depth, softness and rounded umami. Guided by the belief that no effort should be spared, our Chashi (茶師) protects the vivid colour, fine texture and mellow flavour through careful selection, blending and milling. Your questions, answered
What makes Matcha No.75 “ceremonial grade”?
Ceremonial grade is the highest tier of matcha — young, shade-grown leaves stone-milled to a silk-fine powder, smooth and naturally sweet enough to drink on its own. No.75 is our house standard for it: the same vivid green, fine texture and deep umami in every bowl.
How much do I use, and how do I make it?
For a traditional bowl, sift about 2g (a heaped half-teaspoon), add 60ml of water at around 80°C, and whisk briskly in a “W” motion until a fine froth forms. The full method — whisked, latte and iced — is in “How to brew” above.
Does matcha have caffeine?
Yes. Because you drink the whole leaf, matcha gives a steady lift rather than a spike — its caffeine is balanced by L-theanine for calm, level energy, and no crash.
How should I store it?
Keep it sealed, cool and out of the light, away from air and moisture — a dark cupboard or the fridge is ideal. Press the air out and reseal after each use, and never scoop with a wet spoon.
How long does it stay fresh?
Matcha is at its best fresh. Sealed, it keeps until the best-before date on the pack; once opened, enjoy it within four to six weeks for the brightest colour and flavour.
Where does it come from?
A single origin — Sonogi, in Nagasaki, where the ridge meets Ōmura Bay. Every harvest is tasted, selected and blended by our Chashi (tea master) to one signature.
What’s in it? Is it vegan and gluten free?
One ingredient: 100% Japanese tencha, stone-milled. No fillers, no sugar, no additives — ever. It’s naturally vegan and gluten free.
What do I need to prepare it?
Traditionally, a bamboo whisk (chasen), a bowl and a small sifter. For lattes, a handheld frother works beautifully.
